Domaine Raspail-Ay

A forefather of Dominique Ay, Eugène Raspail, founded a domaine in 1854. At that time the two domaines, Château Raspail and the fields of Domaine Raspail-Ay were included in the possessions of Eugène Raspail. His descendants divided the possessions and Domaine Raspail Ay became an independent domaine. Today, the domaine is run by Dominique Ay’s son Christophe. The estate covers 19 ha of Gigondas. All of them situated around the property.

The vines are farmed organically although the domaine is not certified. Grass is maintained on every two raws. The grapes reach the cellar maximum one hour after being harvested. Every grape variety are vinified separately.

The maceration is long (30 days) but extraction is very gentle. The fermentation is made on indigenous yeasts and takes place in concrete tanks and stainless steel. Different grape varieties are blended together before the wine is aged in very old oak foudres for 18 to 24 months.
